Chocolate Bread Pudding

Never eat bread pudding bfore.. and this is my 1st trial to make and to taste... hahahaha. Lucky me... my girl loves it so much and she was so upset when knowing there's nothing left in the dish.. This recipe courtesy of Paula Deen Food Network as i adore her for dessert recipes. But always remember to reduce the sugar amount... hihihi.. Paula looovvveesss sugar so she always put lots into it. :) still i love her though...

The Recipe

Ingredients
1-pound loaf French or Italian bread, cut into cubes (about 15 cups)
3 cups milk
1/4 cup heavy cream
1/2 cup coffee-flavored liqueur
1 cup granulated sugar
1 cup packed light brown sugar
1/4 cup cocoa powder
1 tablespoon vanilla extract
2 teaspoons pure almond extract
1 1/2 teaspoons ground cinnamon
6 large eggs, lightly beaten
8 ounces semisweet chocolate chips

Directions

Preheat the oven to 325 degrees F.
Lightly grease a 13 by 9-inch baking dish. Place the bread in the baking dish.
In a large bowl, whisk together the milk, cream, and liqueur.
In another bowl, combine the granulated and brown sugars with the cocoa powder and mix well. Add this to the milk mixture and whisk to combine.
Add the vanilla and almond extracts and the cinnamon to the beaten eggs. Combine the egg mixture with the milk mixture and mix well. Stir in chocolate chips. Pour the mixture evenly over the bread cubes; let stand, stirring occasionally, for at least 20 minutes, or until the bread has absorbed most of the milk mixture. Bake the pudding for 1 hour, or until set; a knife inserted into the center of the pudding should come out clean. Serving the pudding warm, or refrigerate it and serve chilled.

Serve it warm or cold, with whipped cream or a dessert sauce.

Indonesian Tradisional CupCake a.k.a Kue Mangkok

Yaaaaaaayyy.. finally made it!!!..
i love Kue Mangkok since i was a kid. Today i experiment with my maid's old recipe that she always make every year to greet the Ramadhan. Actually i intended to try 1 of the recipe from internet, but.. hey..she always makes this Kue Mangkok every year!! so... i've better start with her though... hahahaha..

and u know what.. her recipe is sooo simple.. and the method she used was so easy, compare those from the internet. so.. i think.. anyone could try this recipe for your 1st trial.
and beyond my expectation... my kids looveee it!! hahahaha...
so.. thanks mbak dyah for this lovely recipe u've gave me... :)

Ingredients:

½ kg rice flour + 1 tsp baking powder

¼ kg fermented cassava (a.k.a tape)

½ kg sugar (u can reduce it if too sweet)

600 ml coconut milk

295 ml sweet soda ( I use 1 bottle of sprite)

Put rice flour, fermented cassava, and sugar in a bowl, and stir until combined.

While stiring the mixture, add coconut milk by batch.

Add the soda and stir slowly until all the ingredients mix evenly, and get the right consistency.

Let the mixture rest for about 30minutes, then steam.

How to steam:

Bring water to boil in a steamer.

Put all the cup (in Indonesia, we call it “cucing”) into the steamer just until hot.

Fill the cup with the batter until full (reach the edge of the cup).

Wrap the lid with dry cloth to avoid water drop onto the cake.

Steam for about 20-25 minutes. Don't open the lid until 20 minutes.

Avocado Mousse Cake

1st trial making this cake for mom's bday present.. cihuuuuuyyyy...successfully!! got the recipe from the cookbook "Mousse Cake, Modern cake step by step". I add more white cooking choc coz my avocado not sweet enough and a hint of green food coloring to give and maintain the color of avcado :) For the topping i made choc mousse buttercream... everything's about mousse everybody! hahahahaha...

U can use any kind of choc cake.. either sacher torte, black forest, or sponge cake. This avocado mousse recipe fit for 20x20x4 square pan cake (1 layer). Usually i add another kind of mousse (i.e. choc mousse) for the other layer of cake, i mean ... 3 layer cake and using 2 kind of mousse, avocado and choc.

Avocado Mousse recipe:
200 gr avocado, mashed.
100 gr white cooking chocolate, melted
8 gr gelatin, soak in cold water and boil (i use 1 tsp gelatin powder)
200 gr heavy cream, whipped

Mix the avocado, white choc and gelatin.
Add whipped cream by batch into the avocado mixture whilist stir it until well blended.

i did different technique from the cookbook which is i boil the gelatin together when i melted the white choc. When the choc already melt, i add the gelatin and keep stirring so white choc and gelatin could mix evenly. Turn off heat and let it cool. Then i add avocado into it. And put avocado mixture into whipped cream and stir them until well blended.

Berry Berry Tiramisu

Another modification of tiramisu that i made, nice dessert, there r sweet from the cream, sour berry, and moist sponge cake. Modified from previous tiramisu recipe that i've posted couple years ago. Bcoz i use berry syrup instead of coffee syrup that i made from scratch, so i "lighten" the cream with more whipping cream , so it still taste cheesy but more fresh whipping cream in it. U can use lady finger, sponge cake, nilla wafer, or other kind of cake/cookies u like. In this recipe i use sponge cake with the recipe i posted previously too.

ingredients:
125 cream cheese
300 ml heavy cream
100 gr confectioner sugar
2 egg yolks
25 gr sugar
1/2 tsp vanilla extract
Berry syrup, recipe below.

Beat the cream cheese in a low speed just to break the solidness of it.
Beat the cream until bubling and add the confectioner sugar gradually, beat in high speed until sift peak formed. Set aside and store in fridge.
Beat the yolks & sugar until color of pale and mixture thickened.
Continue to beat on the boiled water (beat with low speed) until egg warmed.
Take the bowl away from boiled water, add the vanilla extract, and continue beating until mixture back cold again. Set aside.
Combine the cream cheese and cream mixture and beat together in a low speed.
Add the yolks mixture into the cream mixture, mix all together. Put in a fridge until firm.

Berry syrup:
Put the berry (frozen strawberry, raspberry, and bluberry) in a sauce pan on medium-high heat.
Add sugar and stir occasionally until bubbling. Turn off the heat and let it cool before assembling the tiramisu.

Mix together flour, sugar, baking powder, baking soda, salt in a large bowl and set aside.
In a separate bowl, combine the yolks, buttermilk, vegetable oil, and vanilla extract.
Make a well in a center of the dry ingredients and pour the liquid mixture in it. Mix together until the flour just incorporated. Add with permesan, mix well, and set aside.
In a small bowl, using electric mixer, beat the egg whites and cream of tartar until soft peaks form.
Fold the egg whites into the batter just until incorporated. Let sit for 15 minutes.
Heat the pan butter, scoup the batter into it, after bubbling that means it's time to flip.

Tuh cannoli shell dah nangkring sejak desember 2008 kmrn, oleh2 Rika&Tim from AZ. blm sempet plus blm berani nekat bikin fillingnya. Nah.. kebetulan kmrn bikin modifikasi dari Cake Mix nya tante Betty (Betty Crocker gitu loh), sekalian aja dibikin layer cake, plus ada sisa adonan cream cheese yg abis dipake buat No Bake Cheesecake with cookie crust. Truuus... ada sisa ganache di kulkas, pake jugaaaa... hahaha.. jadinya, walah... 2 hari udah abis tuh di embat krucil2... slameeettt...slameeettt... biasanya tante elisa & om david tuh yg kebagian tugas ngabisin hasil iseng2 ku di dapur, hahahahaha..

Resepnya... mmm... mmm... gak usah yah..*tampang malu**...tanya tante Betty aja deh. Ini di posting cuma sekedar memuaskan keinginan... Narciiissstttt... qiqiqiqiqiqi...

Coffee Meringue

(ini potona malem2 ... pencahayaan kurang, dan yg dipoto emang sengaja yg gak berongga tuh, biar sama spt yg dijual di indonesia, hihihi..)

Many thanks for mak Esther for sharing this fabulous recipe. Getuuuu... Makanya bingung jg neh.. hihi... tapi kalo yg dijual di indo tuh yg full gitu... hhmm.. yah, apa aja deh, yg penting dua2nya enak kok.

Nescafe Meringue ala mbak Estherlita :

300cc putih telur
500 gr gula halus
3 sdm nescafe (utk 1/2 resep tadi aku pake 1 Tbsp coffee)
1 sdm cuka (utk 1/2 resep aku pake 1/2 Tbsp kurang dikit)
200 gr kacang mede, parut kasar
100 gr dark chocolate, parut kasar

Kocok putih telur dengan electric mixer medium speed sampai mengembang, masukkan gula halus sedikit2 sambil terus di mixer.
Masukkan jg nescafe dikit-dikit dan terus di mixer sampe membentuk soft peak (sampai kaku).
Masukkan cuka dan teruskan mixer full speed sampai adonan keras.
Masukkan kacang mede dan dark choc, aduk sebentar.
Sendoki dan cetak di loyang. Bake in 300F for 1 hour. Sesekali oven dibuka.
Setelah 30menit pertama, tukar posisi loyang agar matangnya merata.

Biji Salak

AlhamduliLLAH akhirnya keturutan jg nih makan biji salak, hehehe... biar baby nya gak ngeceess yaa...Cuma dpt ubi (sweet potato) dikit dari chinatown, gak sampe se- pound euy.. jadinya akhirnya yaa cuma dikit, tapi gak papa lah.. namanya jg masih testing, percobaan pertama. Resep pake NCC, oke bgt... tapi karena air aku kurangi karena takut keenceran, ternyataaahhh... emang bener anjuran NCC, harusnya airnya segitu deh, i mean... according to the recipe, hihihi.. soalnya gak usah kuatir kentel, krn ntar pas di cemplungin bola2 yg udah bercampur tepung sagu, tuh cairan gula jg akan kental sendiri kok.

Resep aku adopt dari NCC yah... cuma bedanya, adonan cairan gula merah (gula jawa) aku mix ama brown sugar (ngirit gula jawa booo.. very rare in here).
Bahan :
500 gr ubi merah, kukus, haluskan
3 sdm tepung sagu
500 gr gula jawa (aku combine ama brown sugar, enak jg)
1 lt air
500 ml santan kental (better use Hawaiian Sun)
1/2 sdt garam
1 lb daun pandan
Masukkan tepung sagu kedalam adonan ubi yg telah dihaluskan, aduk rata. Bentuk bulatan sesuai selera.
Matikan api.
Masak santan, garam, dan pandan hingga mendidih, angkat.
Sajikan biji salak bersama santan nya.
